The purpose of this paper is to identify the main research fields concerning food label designs and build a topic overview. To this end, the literature review method was chosen.

Abstract

Purpose

The purpose of this paper is to identify the main research fields concerning food label designs and build a topic overview. To this end, the literature review method was chosen.

Design/methodology/approach

A sample of 121 papers was identified and analyzed using bibliometric analysis. Journals, articles, authors of the sample and the term co-occurrence map, which represents the recurring themes and organizes them in clusters, were defined. To recognize the main research fields, starting from analyzing the terms that compose each cluster, the results were discussed in a focus group composed of five experts.

Findings

Food labelling theories are distinctly related to eight research fields: consumer behaviour analysis, consumer willingness evaluation, consumer product evaluation, nutrition and health, daily foodstuff and meal effects, food industry and related products, impacts on market and society and child nutrition.

Research limitations/implications

Several stakeholders could be interested in the results of this paper. Food companies could identify the best practices in food labelling theories to improve their products and labels. Governments could understand how social policies are acknowledged by consumers and how to create new policies. Researchers could identify new issues to investigate. The results could also facilitate bibliographical referencing for those who approach this topic for the first time.

Originality/value

To the best of the authors’ knowledge, studies on food label theories explore the themes from the consumer’s perspective. The authors’ study, in contrast, focused on recognizing the research fields where food label designs are addressed.

Abstract

Purpose

Nowadays, the agri-food industry is called to face several sustainability challenges that require the development of new sustainable models. The adoption of new technological assets from Industry 4.0 supports the companies during the implementation of sustainability practices. Several models design the operation management of the food supply chains (FSCs). Because none extant models resulted complete in technological and sustainability elements, this paper aims to propose an innovative and sustainable agri-food value chain model, contributing to extend understating of how supply chains can become more sustainable through the Industry 4.0 technologies.

Design/methodology/approach

Thanks to a well-structured and replicable systematic literature review and sequent content analysis, this work recognized and compared the extant FSC models, focusing on the interaction of five key elements: activities, flows, stakeholders, technologies and sustainability. The output of the comparison leading in the definition of the proposed model is discussed in a focus group of 10 experts and tested in a case study.

Findings

Fifteen extant models were recognized in literature and analysed to discover their features and to putt in light peculiarities and differences among them. This analysis provided useful insights to design and propose a new innovative and sustainable agri-food value chain model; an example for the olive oil business case is provided.

Originality/value

The adding value of the work is the proposed model which regards innovative elements such as recirculation flows, external stakeholders and Industry 4.0 technologies usage which allows enhancing the agri-FSCs operational efficiency and sustainability.

Abstract

Purpose

The future increase of chronic diseases in the world requires new challenges in the health domain to improve patients' care from the point of view of the organizational processes, clinical pathways and technological solutions of digital health. For this reason, the present paper aims to focus on the study and application of well-known clinical practices and efficient organizational approaches through an innovative model (TALIsMAn) to support new care process redesign and digitalization for chronic patients.

Design/methodology/approach

In addition to specific clinical models employed to manage chronic conditions such as the Population Health Management and Chronic Care Model, we introduce a Business Process Management methodology implementation supported by a set of e-health technologies, in order to manage Care Pathways (CPs) digitalization and procedures improvement.

Findings

This study shows that telemedicine services with advanced devices and technologies are not enough to provide significant changes in the healthcare sector if other key aspects such as health processes, organizational systems, interactions between actors and responsibilities are not considered and improved. Therefore, new clinical models and organizational approaches are necessary together with a deep technological change, otherwise, theoretical benefits given by telemedicine services, which often employ advanced Information and Communication Technology (ICT) systems and devices, may not be translated into effective enhancements. They are obtained not only through the implementation of single telemedicine services, but integrating them in a wider digital ecosystem, where clinicians are supported in different clinical steps they have to perform.

Originality/value

The present work defines a novel methodological framework based on organizational, clinical and technological innovation, in order to redesign the territorial care for people with chronic diseases. This innovative ecosystem applied in the Italian research project TALIsMAn is based on the concept of a continuum of care and digitalization of CPs supported by Business Process Management System and telemedicine services. The main goal is to organize the different socio-medical activities in a unique and integrated IT system that should be sustainable, scalable and replicable.

Abstract

Following the triple helix (TH) model and the way knowledge is transferred into the industry domain, this chapter aims to define features interface that should be implemented in order to facilitate the University–Industry (UI) relationship and thus encourage the spin-off creation.

In order to support this relationship, a new business model configuration of an entrepreneurial ecosystem is proposed, aiming at creating a sustainable environment, where business entities can grow. The field of the Governance of Entrepreneurial Ecosystems is also investigated in order to define a framework for launching, developing, and sustaining a company over time.

This chapter presents a case study developed within the University of Salento (Italy). It capitalizes results from three different research analyses, based on questionnaires and interviews with actors of the spin-off network (professors and researchers, graduating students, admin-tech staff of the Technology Transfer Office, spin-offs’ CEOs/Associates, and R&D managers of external companies) and on results coming from scientific publications and regional/national reports in the innovation context.

A research methodology based on semantic network analysis and sentiment analysis has been applied in order to identify which features an interface should implement in order to facilitate the UI relationship and encourage the spin-off creation.

To support the start-up overcoming the “death valley,” the creation of a link between the strategy used to transfer value to the market and the phase of innovation is proposed inside the business model configuration. Some aspects of a governance model of an entrepreneurial ecosystem were also presented in order to support the business evolution of a single business entity and assuring sustainability over time.

Abstract

Purpose

The purpose of this paper is to describe the case of a leading Italian aerospace company which developed an integrated system aimed to optimize the management of engineering competencies within the Chief Technical Office function.

Design/methodology/approach

The paper was based on a set of interviews to company referents and a one‐year period of researcher's observation at the company site to analyze competence management processes and the application on the field of the methodology and the tool. The approach adopted is to present a real practice following a pragmatic and illustrative approach.

Findings

The integrated system provides an objective method to support critical evaluations related to the management of competencies and actors. The benefits achieved derive from a more effective and efficient monitoring of competencies available to perform given activities, and from the analysis of gaps, actor allocation, and job‐rotation issues.

Research limitations/implications

The application of the method and the tool is still quite “dependent” from the skills of their developers. Besides, the activities and competencies of those units which support new product development processes should be also integrated in the system.

Practical implications

The case described can be a useful benchmark for organizations working in complex industries in the effort of improving the performance of engineering activities through an enhanced management of knowledge about people potential and expertise.

Originality/value

The value of the paper may stay in a twofold process/project and people management perspective in the monitoring, development, and scouting of technical competencies.

Abstract

Purpose

The purpose of this paper is to show with figures the potentialities of knowledge‐based engineering (KBE) methods in new product development (NPD). It estimates the business value generated by a tool which integrates the handoff between engineering groups of a large aerospace company.

Design/methodology/approach

The paper is based on three years of observation and interviews at a leading Italian firm. A process‐based approach is used for assessing business value.

Findings

The KBE application automated the preparation of data transferred to computer‐aided engineering engineers for analysis by computer‐aided design engineers and reduced the time required by more than 90 percent. This allowed time savings which contributed to enhance product quality.

Research limitations/implications

The paper is based on a single case, though its findings are consistent with prior studies. Future research will implement like applications in other contexts at the subject firm and other firms.

Practical implications

The paper helps managers to understand the uses and potential value of KBE applications, enhancing the awareness of NPD practitioners in a field which is still partially untapped.

Originality/value

The paper combines discussion of the technical aspects of implementing a KBE tool with estimates of performance improvement achieved. It can be a useful illustration of a good practice and a proof‐of‐concept for further implementations in complex engineering settings.

Abstract

Purpose

This paper aims to find the best tools to influence the improvement of sustainability in food supply chains (FSCs) by conducting a systematic review of articles. The reader will learn how the different industry 4.0 tools (I4.0T) benefit the FSC and the limitations of each tool.

Design/methodology/approach

A review of 436 articles published during the period 2019 to 2022 referenced in the Scopus and Web of Science databases was performed. The review was limited to articles published in English and directly related to Industry 4.0, circular economy and sustainability in the food supply chain.

Findings

The results show different contributions of I4.0, with some being more influential than others in improving sustainability in FSCs; for example, Internet of Things and Blockchain have been shown to contribute more toward transparency, traceability, process optimization and waste reduction.

Originality/value

The paper's contribution consisted of ranking according to their importance and the I4.0T that affect sustainability in FSCs by classifying the aspects of each tool and the sustainability factors through a categorization by the Analysis Hierarchy Process.

Abstract

Purpose

Nowadays manufacturers companies are increasingly compelled to navigate towards servitization. Different methods and approaches were proposed in literature to support them to switch from traditional product-based business model to product service systems (PSSs). However, new knowledge, capabilities and skills were needed to consistently develop PSSs, since they need a joint focus on both customer’s perspective and company’s internal performance and at the same time a proper support for the integration of product and service design. The purpose of this paper is to propose the Product Service System Lean Design Methodology (PSSLDM), a structured methodology to develop PSSs along their entire lifecycle.

Design/methodology/approach

Retrieving concepts from interpretative, interactive and system development research traditions, and strongly reminding the design research methodology framework, the adopted research methodology is composed of three main phases (observation and conceptualization, theory building and tool development, validation) and involved three heterogeneous companies.

Findings

This paper provides an overview of the PSSLDM, explaining how the different methods supporting its conduction should contribute to properly design an integrated PSS. Moreover, companies highlighted several benefits in the different stages along the PSS lifecycle deriving by the adoption of the PSSLDM.

Research limitations/implications

The development of a platform based on the PSSLDM methodology raises a discussion on the possible changes needed by current Product Lifecycle Management (PLM) models and systems when they have to do with PSSs.

Originality/value

The PSSLDM enriches the already proposed SErvice Engineering Methodology, introducing new several components linked by lean rules in each of its phases (starting from customer analysis, going through solution concept and detailed design, until the offering analysis) and better supprting the deatil design of both prodcut and service components.
